Matcha Cookies

Crisp, buttery cookies with that distinctive emerald green hue and grassy, umami-rich matcha flavour. Rolled in sugar before baking, they're as beautiful as they are delicious.

Makes: 12 cookies

Ingredients

  • ¾ cup icing sugar
  • 1½ Tbsp Matcha powder
  • 140g butter
  • 1¾ cups all-purpose flour
  • 3 large egg yolks
  • 1 cup granulated sugar (for rolling)

Method

  1. Preheat oven to 180°C. Line a baking sheet with parchment paper.
  2. Whisk icing sugar and matcha together in a bowl.
  3. Beat butter and the matcha-sugar mixture in a stand mixer until smooth and light in colour.
  4. Add flour and mix until well combined. Add egg yolks and mix until incorporated.
  5. Form the dough into a disk and refrigerate until firm, about 30 minutes.
  6. Roll dough out to ⅛ inch (3mm) thickness and cut into shapes.
  7. Toss each cut cookie in granulated sugar to coat. Place on the lined baking sheet.
  8. Bake at 180°C for 12–15 minutes until just set. Cool on a wire rack.
