Ginger Kisses

Made with Ginger Kissed Organic Tea

Melt-in-the-mouth sandwich biscuits with a ginger-kissed butter filling, delicate, warming and utterly moreish. These little kisses are the perfect partner for an afternoon cup.

Makes: 16 kisses

Biscuits

  • 2 cups flour
  • ½ cup cornflour
  • ¼ tsp salt
  • ¼ cup icing sugar
  • 230g butter
  • ¼ cup boiling water
  • 3 tsp Ginger Kissed Tea

Filling

  • 100g butter
  • 1–2 cups icing sugar
  • 3 tsp Ginger Kissed Tea

Method

  1. Sift flour, cornflour and salt into a bowl and set aside.
  2. Beat butter and icing sugar until smooth. Infuse Ginger Kissed Tea in the boiling water and add to the butter mixture.
  3. Add the flour mixture and mix until just blended.
  4. Roll level tablespoons of dough into smooth balls. Place on prepared baking sheets, spacing 5cm apart. Gently flatten with a fork.
  5. Bake at 180°C for 25–30 minutes, until tops feel firm and bottoms are lightly browned. Cool completely.
  6. For the filling, melt butter and add Ginger Kissed Tea. Infuse for 15 minutes, then strain out the tea leaves.
  7. Beat icing sugar into the infused butter gradually until the filling is firm enough to spread.
  8. Sandwich pairs of cooled biscuits together with a generous smear of filling.
