Christmas Tea Shortbread

Made with Christmas Tea

A festive, buttery shortbread fragrant with the warming spices of t leaf T Christmas Tea. These melt-in-the-mouth biscuits are wonderful gifted in a tin, if you can resist eating them all yourself.

Makes: 30 biscuits

Ingredients

  • 250g butter, melted
  • 1 cup icing sugar
  • 1 cup cornflour
  • 2 cups flour
  • 2 Tbsp Christmas Tea

Method

  1. Cream butter and icing sugar until light and fluffy.
  2. Sift in the flour and cornflour and mix to combine. Add the Christmas Tea and mix through. If the mixture is very dry, gradually add 1–2 Tbsp milk or brewed Christmas Tea, take care not to add too much.
  3. Knead the dough until it holds together. Roll out to 0.5cm thickness on a lightly floured surface.
  4. Using cookie cutters, cut into desired shapes. Place on a lightly greased tray or baking paper.
  5. Bake at 150°C for 30 minutes or until lightly golden. Cool on a wire rack before serving.
